Sweet Potato – Kumara (Ipomoea batatas)

Native to South America but widely eaten throughout the Pacific.

•Mostly enjoyed as a cooked root crop.

•Raw leaves make an excellent salad green, or use cooked in stir-fries.

•Sweet potato is an excellent groundcover (though it can take over).

•The vines can be trained onto trellises or over banks.

•Tubers can be harvested year-round.

•Productive year-round leaf crop.

Can easily be trained up a structure for limited spaces.
